If you try to flash-vaporize a block of steel in air, the air molecules bounce the metal vapor back. It re-condenses. It is a mess.

In a Vapor Vacuum, a vaporized atom travels in a straight line until it hits a collector. The mean free path at UHV exceeds the chamber dimensions by orders of magnitude. This is what enables Atomic Printing — we can coat a surface with atom-perfect layers of material because there is nothing in the way.
